Food Preservation-Canning 101

Ever wanted to learn how to preserve fruits and vegetables? Whether from your own garden or from the local Farmer’s Market, we will show you the basics of canning fruits and vegetables. Learn the basic, and most up to date techniques needed to preserve fruits & vegetables, so you can turn them into wonderful jams, jellies, preserves, butters, salsas, relishes, pickles, and side dishes that even Grandma would be proud of. Includes demonstrations of how to use both the pressure canner and the water bath canner. We will be canning salsa (water bath) and dried beans (pressure canner).

Bring paper and pencil/pen, and if you have it a Ball Canning guide that is not more than 5 years old.

New Orleans Style Cajun Gumbo

Join Chef Tyler and Donna Standridge in learning the secrets of true Cajun/New Orleans style “dirty” gumbo. In this seafood and Andouille Sausage version, you will learn how to make dark roux, de-slime okra (very important you know), as well as a little history and gumbo etiquette! Basic kitchen and knife skills required. **Please wear close-toed shoes and tie back long hair.

Beginning Pickleball

This course will teach the basics of pickleball. The student will learn the equipment, court and rules of the game. The student will also participate in drills practice designed to learn or enhance the student’s skill level. There are some differences between singles and doubles play; therefore, the student will experience both throughout the course.

Improve Your Photography-Basic and Intermediate

In this course you will learn essential techniques on how to take better photos with your camera or phone. The course includes in class instruction and outside on the spot photography in various areas around Texarkana. Participants will also get hands on experience flying a drone and will be given fun homework photography assignments that will be reviewed in the following class.

UKE 107:The Beatles

What music is more fitting for the Fab 4-string uke than that of the Far-4 Beatles. In this one-hour class, you’ll learn several familiar Beatles tunes. Beatles music fits great on the uke because the Beatles we all uke aficionados. Come join John, George, Paul, Ringo, and me. You don’t even have to be 64! This class is for ages 10 and up who have completed uke 101 or know some basic uke chords. Just bring yourself, your uke, and a tuner. UKE 108: 12 Bar Blues

What do Johnny B. Goode, Day Tripper, Boogie Woogie Bugle Boy, and Kansas City have in common? All are based on the 12-bar blues! In this short, one-hour class, you will learn the structure of the 12-bar blues which can apply to 100s of songs. We’ll add a few cool techniques including intros, outros, and turn arounds. Heck, you’ll even write your own blues tune! Watch out Chuck Berry! This class is for ages 10 and up who have completed uke 101 or know some basic uke chords. Just bring yourself, your uke, and a tuner. Copies of PowerPoint slides, our class songbook, and other handouts will be provided to add to you binders, and as always—SNACKS! UKE 102: Barrels of Carols

This 3-hour course offered over two mornings picks up where UKE 101-From zero to hero leaves off, and is based on Bogart and Peters’ 21 Easy Songs for Christmas. Students will learn additional chords, strumming patterns, and percussive techniques. You will learn loads of new songs, literally, barrels of Christmas carols. Not many ways to have much more fun than this! It don’t mean a thing if it ain’t got four strings. Just bring yourself, your uke, and a tuner.

Advanced Oil Painting

Designed for advanced oil painters or those who have previously taken my oil painting class. This course expands on the processes of oil painting like the Masters. Students continue to learn various paint application techniques and color mixing theories to provide advanced oil painting works of art.

This course offers instruction in a variety of genres including landscapes, portraits, and still life. In addition, class exercises encourage students to confidently experiment to find their own direction and style. Please see Supply list below for supplies needed for class.
